Ingredients:

  • 2 pounds (about 900g) beef stew meat, cut into bite-sized pieces

  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 4 carrots, sliced
  • 4 potatoes, peeled and diced
  • 2 celery stalks, sliced
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (for thickening, optional)

Instructions:

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and brown it on all sides. Remove the meat from the pot and set it aside.

  2. In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent.

  3. If you're using red wine, pour it into the pot and scrape up any browned bits from the bottom. Allow it to simmer for a few minutes to reduce slightly.

  4. Return the browned beef to the pot. Add the beef broth, dried thyme, dried rosemary, bay leaves, salt, and pepper. Bring the mixture to a boil.

  5. Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours or until the beef is tender. You can also use a slow cooker for this step if you prefer.

  6. Add the carrots, potatoes, and celery to the pot. Continue to simmer for another 30-45 minutes, or until the vegetables are tender.

  7. If you'd like a thicker stew, you can create a slurry by mixing the flour with a little water and slowly stirring it into the stew. Let it simmer for a few more minutes to thicken.

  8. Remove the bay leaves and discard them. Stir in the frozen peas and let them heat through.

  9. Taste and adjust the seasoning with more salt and pepper if needed.

  10. Serve your homemade beef stew hot and enjoy!
