 Keto Chicken Alfredo

 

Ingredients:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish (optional)
  • Zucchini noodles or spaghetti squash for serving

Instructions:

  1. Season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until they are cooked through and no longer pink in the center. Remove the chicken from the skillet and set it aside.

  2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.

  3. Reduce the heat to medium-low and add the heavy cream, butter, grated Parmesan cheese, garlic powder, onion powder, and dried Italian seasoning (if using). Stir continuously until the sauce is smooth and the cheese is fully melted.

  4. Season the sauce with salt and pepper to taste. Continue to simmer the sauce for a few minutes until it thickens to your desired consistency.

  5. Slice the cooked chicken breasts into strips or cubes.

  6. Serve the chicken over zucchini noodles or spaghetti squash.

  7. Pour the creamy Alfredo sauce over the chicken and noodles.

  8. Garnish with chopped fresh parsley if desired.
